I am really enjoying eating like a Vegetarian. I thought it was going to be hard but it's a lot easier than I had anticipated. I don't mind substituting animal protein with Tofu, I actually like it a lot and I feel it's a lot healthier for me. It also seems like I have more energy, I went to the gym and did an hour of cardio and it felt amazing. For tonight's dinner, I made one of my favorite noodles, Pad Thai. I add tofu for protein and napa cabbage for some greens and this Pad Thai sauce paste that I absolutely love for flavor.
It feels like I'm cheating with this sauce but it has all the authentic ingredients you'd find when making your own sauce from scratch. I love this sauce! I like it along with noodles and I have a delicious meal. You can find this jar at any Asian Market. Ingredients:
1 lb of rice noodles
2 tbs of vegetable oil
1 block of tofu, diced
2 1/2 tbs of pad thai sauce
soy sauce to taste
3 thai red chili
1/4 cup of peanuts
3 cups of napa cabbage, chopped
1 tb of cilantro, chopped
chili flakes or sriraracha sauce (optional)
Directions:
I start my pad thai by soaking the rice noodles in hot water until they are soft for approximately 20 minutes then drain it.
I heat up my frying pan nice and hot and add 1 tbs of vegetable oil. Then I add my noodles and saute it. Add water if it starts to dry about a tablespoon at a time. Add the sauce and mix well.
I add the tofu and quickly saute them coating them with the sauce. Add red Thai chili, peanuts and saute for 2-3 minutes.
Add napa cabbage and cook until tender but firm.
Garnish with cilantro and dried chili flakes. For some heat, drizzle on some sriracha sauce for a nice kick

Looks delicious. As a vegeatarian just watech your complex carbs. You have to have enough protien
@Nicole - I bought the pad thai sauce at the Asian Market at Marina Foods in San Jose, in the sauces aisle where they keep the soy sauce and fish sauce.
